Tamilnadu Style Chicken Biryani Recipe:

Ingredients:

For Marination:

- 500g chicken, cleaned and cut

- 1 cup yogurt

- 2 tbsp biryani masala

- 1 tbsp ginger-garlic paste

- Salt to taste


For Rice:

- 2 cups Basmati rice, soaked for 30 minutes

- Water for cooking rice

- Whole spices (bay leaves, cinnamon, cardamom, cloves)

- Salt to taste


For Gravy:

- 3 large onions, thinly sliced

- 2 tomatoes, chopped

- 2 green chilies, finely chopped

- Handful of mint and coriander leaves, chopped

- 1 tbsp ghee

- 2 tbsp oil


Spices:

- 1 tsp Biryani masala

- 1 tsp garam masala

- Whole spices (bay leaves, cinnamon, cardamom, cloves)

Instructions:

1. Marinate Chicken:

In a bowl, mix chicken with yogurt, biryani masala, ginger-garlic paste, and salt. Let it marinate for at least 1 hour.


2. Cook Rice:

Boil water in a pot, add soaked rice, whole spices, and salt. Cook until 70-80% done. Drain excess water.


3. Sauté Onions:

In a pan, heat oil. Sauté sliced onions until golden brown. Set aside a portion for later use.


4. Prepare Gravy:

In the same pan, add ghee. Sauté green chilies, chopped tomatoes, and marinated chicken until the chicken is partially cooked.


5. Layering:

In a heavy-bottomed pan, layer partially cooked rice over the chicken mixture. Sprinkle biryani masala, garam masala, fried onions, and chopped mint-coriander leaves between the layers.


6. Dum Cooking:

Seal the pan with a tight-fitting lid or foil. Cook on low heat for 20-25 minutes, allowing the flavors to meld.

7. Garnish:

Once done, gently mix the layers. Garnish with fried onions and fresh herbs.

8. Serve:

   Serve hot with raita or a side of your choice.

Adjust spice levels according to your preference.

For added aroma, you can sprinkle saffron-infused milk on top before dum cooking.
